President's Supper

Davidson Dining Presents the 2014 Baccalaureate Dinner

Express and Du Jour
• Roast Chicken Za’atar - Bone-in chicken seasoned with olive oil, our house-made Za’atar seasoning blend, garlic, Meyers Lemon and Lime Zest, salt and black pepper
• Charred Honey-Miso Salmon - Salmon filet marinated in honey-white-miso mixture, seared then finished in the oven
• Roasted Mediterranean Vegetable Tart - Oven-roasted eggplant, red and yellow peppers, sweet potatoes, zucchini, grape tomatoes and sautéed red onions combined in feta-ricotta cheese mixture that is baked
• Herbed white and wild blended rice (v)
• Seasonal vegetables to include items from The Farm at Davidson(v)

Grill Station
• Chicken Parmesan - breaded chicken patty topped with house-made marinara and mozzarella cheese
• Eggplant Parmesan - Breaded eggplant cutlet topped with house-made marinara and mozzarella cheese
• Penne Pasta with Marinara Sauce(v)
• Seasonal vegetables to include items from The Farm at Davidson (v)

Salad
Seasonal lettuces and vegetables tossed with a house-made vinaigrette (v)

Desserts
A variety of baked sweets created by the Wildcat Bakeshop
